I love pizza and this is a twist that feeds my cravings in a heart healthy way. The best part is it couldn't be easier, y'all! Here are the steps:
Take a store bought pie crust and form it into a tart pan cutting off the excess crust. Cover the crust with aluminum foil, weight it down and bake in a preheated oven at 400 degrees for 20 minutes.
Remove the weight and foil and let crust cool for another 20 minutes.
Slather crust with garlic and herb spreadable cheese and top with sliced zucchini and tomatoes. Bake for 15 minutes at 400 degrees. Finish with a dash of pepper, a drizzle of olive oil and TA-DA; a pizza lunch that won't break the caloric bank.
Enjoy!
xoxo,
Lee
This sounds delicious, and I could easily adapt it to make it gluten and dairy free.
