Tasties: BC's Eggplant Caponata

The holidays offered several opportunities to test new recipies for guests, hostess gifts and presents.  One of my favorites was this yummy appetizer from Barefoot Contessa:  How Easy Is That?
We spent New Year's Eve in Blowing Rock with a high school buddy of my hubby's and I brought this dish as an appetizer.  If you like eggplant, roasted red peppers and pine nuts - you'll love this dish.  It would accompany an antipasta board wonderfully!
